Chocolate Aubergine Cake
I have to thank The Clever Guts Diet for this original recipe, now tweaked & made my own. This cake is amazing, I particularly love the texture which is mousse-like and goey, more like a brownie. Delicious, and nutritious.

Ingredients
- 200g of aubergine, skin on
- 100g dark chocolate, I used Green & Blacks 85%, chopped
- 60g coconut oil
- 2 tbsp raw cacao
- 80g chopped prunes
- 1 tsp baking powder
- 1 tsp good quality vanilla extract
- 1 tsp cinnamon
- 3 medium eggs
- 80g ground nuts
- 80g chopped nuts of your choice, I used Tesco’s chopped mixed nuts
If you don't want to use nuts, substitute the ground nuts for plain or oat flour, and the chopped nuts for seeds or dried fruit
Method
- Grease or line a 20cm round tin.
- Heat the oven to 170 / 150 fan
- Dice the aubergine, either steam or microwave until very soft.
- Immediately after place in a large bowl that can take a hand blender, (if you microwaved then use this bowl), add the chopped chocolate, coconut oil & mix well so that they melt. Leave for about 5 minutes to then cool slightly.
- Add all the other ingredients except for the nuts, & whizz with a hand blender.
- Then add both types of nuts (or substitutes).
- Pour into the baking tin and level the top if you like, I didn't as I like the textured look!
- Bake for 30 mins, check after 25 minutes though as you don’t want this overcooked.
- Leave to cool in the tin for 5 minutes, then remove and place on a wire rack.

Eggs provide more nutrients per calorie than any other animal food, except milk. Often described as pretty much a perfect source of protein, rich in selenium (great for good moods), Vitamin A, many B vitamins, iron, phosphorous, calcium, magnesium & potassium. Buy organic ,or at least free range, if you can.
