Savoury spiced pancakes

These pancakes are so easy to make.  Dairy free if you use vegan milk, & gluten free as they include gram (chickpea) flour. 

By the way, my photo shows tiny pancakes as they were made as nibbles for a show.  Just in case you thought I had found some giant broad beans!!

Ingredients

  • 80g gram flour
  • 160ml milk of your choice (I used almond)
  • 1 tbsp raw apple cider vinegar
  • 1/4 tsp baking soda
  • 3/4—1 tsp each of turmeric, fennel or aniseed, ground coriander
  • 1/4 tsp ground ginger
  • 1 tbsp poppy or black sesame seeds
  • Black pepper to taste
  • Coconut oil for frying

Method

  1. Start to gently heat your largest frying pan
  2. Mix all the ingredients in a bowl. It makes quite a thin batter, though it will thicken on standing. 
  3. Start frying—make them whatever size you like. When the texture has changed and little bubbles have formed on the top then they are ready to be turned over.

 That is it—so simple!

 I like mine with homemade mango chutney.  Other toppings can include a cream cheese (vegan or dairy), spicy sauerkraut or kimchi. 

 If you make these larger they make a great alternative to wraps as they are quite thin.

 Make a double batch and freeze half.
