Tropical Energy Bites

A great recipe for the new year when the tropical fruits are in season and you are wanting zingy fresh foods to eat. 

About this Recipe

These can be made into any size balls you like, or simply press the whole mixture into a little baking tray & slice when chilled.

Ingredients

  • 40g chopped dates (I used the pre-chopped ones in rice flour)
  • 40g fresh pineapple
  • 20g dried unsweetened pineapple
  • Approx. 35—40g of rolled oats or oat flour, may need to adjust depending on how juicy your pineapple is!
  • 10g milled/ ground linseeds (or mixed)
  • 1 tsp maple syrup
  • 1 tsp good vanilla extract
  • 20g desiccated coconut + extra for rolling

Method

  1. Place all the ingredients in a food processor and blend.
  2. Be prepared to scrape down the sides with a spatula.
  3. When the mixture has come together almost like a dough, taste it & make any adjustments you want.
  4. Then roll into balls or press into a small baking dish and cut once chilled.
  5. Keep in the fridge or freezer.

Health Benefits

Pineapples, like all citrus fruits, are rich in Vitamin C.  However they differ in that they contain bromelain, which helps digestion, particularly after a big meal.  Pineapples are also an appetite stimulant.  One of the sweetest fruits, best consumed in moderation for those seeking weight loss.

Coconuts have been controversial due to their saturated fat content, however consensus now recognises that they do not raise cholesterol levels.  Coconuts are antiviral due to high levels of lauric acid, a great healthier fat.  Also contain phosphorous, iron, magnesium, zine & some B vitamins.

Oats are higher in protein & healthy fats than most other grains, rich in many vitamins.  Eat them for your heart, your gut, your bones, your brain.  They are filling, so great for weight control & slow release energy.
